The host prepares a meal (budget £6 a head) and Paul brings the wine. He is determined to drink up his impressive stock before (in his words) “I fall off the perch”. The wines are usually from classic areas, Bordeaux, Burgundy, the Rhône, Northern Italy or South Australia.
